How to Use It
Start cold. Lay strips in a cold cast-iron pan or on a parchment-lined sheet pan and bring the heat up slowly — the fat renders better and the meat stays tender. Save the rendered bacon fat; a tablespoon turns a pan of potatoes, eggs, or winter greens into something else entirely.
