What sets it apart: Hand-rubbed with Broadbent's proprietary pepper blend, dry-cured in the tradition passed down since 1909, then hickory smoked until it reaches that perfect balance of sweet, salty, and heat. This isn't grocery store bacon. This is 115 years of Kentucky craftsmanship in every strip.

This is dry-cured country bacon—the same salt cure and hickory smoke Broadbent uses on their country ham. Grocery store bacon is wet-cured and pumped with water to keep it mild. This isn't. Expect it to be noticeably saltier than the bacon you're used to, with the pepper on top of that. If you're new to it, a few things help:

Use less than you think. Two or three slices season a plate. It's built to flavor eggs, beans, greens, and sandwiches, not to be eaten by the half-pound.
Cook it lower and slower. Dry-cured bacon carries less water, so it browns fast. Medium-low heat keeps it from going from crisp to scorched.
Skip added salt in anything you cook with it. The bacon has it covered.

FAQ

Is this bacon salty?
Yes—noticeably saltier than grocery store bacon, even by bacon standards. It is dry cured with salt by design, the same way country ham is. Use fewer slices than you would with regular bacon, and skip added salt in whatever you cook with it.

How spicy is it?
Cracked black pepper heat, not chili heat. Warm and peppery, not hot.

Does it need to be refrigerated?
Not until opened. It ships at room temperature and may arrive warm. That's normal for a dry-cured product.

How is this different from grocery store bacon?
Most grocery store bacon is wet cured and designed to be mild. This bacon is dry cured, which concentrates flavor, firms the texture, and lets the smoke soak all the way into the meat.

I hate to give tjis low rating but the customer service is terrible or nonexistent. There is no customer service number and no one responds to emails. My order came 3 days late and everything was spoiled and thawed. A tital waste of $250. Thanks nit no thanks to ever purchasing again.

My wife likes to start her morning with 7 cups of coffee watching the sun rise peacefully over the horizon. Simultaneously, our young children run, scream, and throw toys into every direction, in every room they enter. The dog jumps around trying to get anyone's attention to get kick started with several cups of dried chicken and rice kibble.

My wife is seemingly unaware of the chaos spilling forward. A chaos that I'm trying to keep confined into our property so that an aloof neighbor doesn't get bitten by one of my feral children. She takes long mediated sips of coffee while butterflies and rainbows emerge in the morning dew.

The dog has meandered into the old folks next door's yard to do his business while I'm yelling at him from the window. Pleading for everyone to give me just a moment. My daughter begins beating up her older brother with various action figures, all the while, my oldest child hides away upstairs knocked out from an evening of texting and watching golf videos.

There's only one way to achieve the level of zen my wife achieves routinely. That's by loading 2.5lbs of Ossian Hickory Smoked Bacon into the convection oven. My secret weapon that will waft throughout our home and cause pure delight.
