Old Fashioned Boneless Half Ham: The Holiday Ham Sized for a Smaller Table

All the hickory smoke of our boneless whole ham, sized for 8 to 10. It's trimmed lean, slow smoked over natural hickory by Ossian Smoked Meats in Ossian, Indiana, and fully cooked, so all you do is warm it. About an hour in the oven, slice it like a roast, and it's on the table.

Why it works

  • Fully cooked. About an hour to warm through at 325°F, so the oven stays free for everything else.
  • Every slice is meat. No bone to wrestle with and no rind to trim. Just smoked pork from the first slice to the last.

Is it fully cooked?
Yes. Heat it at 325°F, covered, with a cup of water in the pan, about 10–12 minutes per pound until it reaches 140°F inside. That's about an hour. Or slice it cold for sandwiches. Full heating guide.

How many people does it feed?
8 to 10 as the main dish. If there is a turkey on the table too, it covers 15 to 20. Serving chart.

How should I store it?
It arrives frozen. Thaw in the refrigerator (allow a day or two), then keep refrigerated and use within about a week of opening. Sliced ham freezes well.

How is this different from a country ham?

Vacuum-sealed and shipped frozen in an insulated cooler with dry ice.

Keep frozen until a few days before you need it. Thaw in the refrigerator (allow 2–3 days for a whole ham). Once thawed, keep refrigerated and use within 7 days.
Cooking & serving
  • Fully cooked. Serve cold, or heat to serve warm.
  • To heat: place in a roasting pan with a cup of water, cover tightly with foil, and warm at 325°F for about 10–12 minutes per pound, until the center reaches 140°F.
  • Glaze in the last 15–20 minutes, uncovered, if you like.
  • Rest 10 minutes before carving.

It was absolutely perfect. Following the supplied instructions it was ready to serve in just under 2 hrs.
Everyone raved over the flavor, and how tender it was.
Served with a Raspberry Purée and Mac n' Cheese it fed a large Superbowl crowd with enough left over for a couple of Ham steaks at breakfast the next day.

Ham was well packaged and arrived frozen solid. Easy prep so easy to heat. Flavor was outstanding but I would have like for it to be more moist. It was heated per instruction inside a roasting bag and placed in a roasting pan with a rack. Used digital thermometer and heated to exactly 150°.
