Canadian bacon isn't strip bacon. It's cut from the pork loin, so it's lean and meaty, closer to a good ham than to a slice of belly. Ossian smokes it whole, fully cooks it, and ships it as one solid piece about 3 pounds, so you slice it as thick or as thin as you want.
Sear a few rounds in a skillet next to your eggs, stack it on an English muffin for Eggs Benedict, dice it into an omelet or a breakfast casserole, or slice it thin for sandwiches. Because it's already cooked, a minute or two in a hot pan is all it needs.
A whole piece goes a long way. Cut what you need, wrap the rest, and you've got breakfast covered for weeks. It's an easy one to have on hand for a holiday brunch, too.
Lean, smoky, and ready when you are.

What's the difference between Canadian bacon and regular bacon?
Regular bacon comes from the pork belly and is sliced thin and fried crisp. Canadian bacon comes from the loin, so it's much leaner and eats more like ham. If you want the classic strip bacon, try Ossian's Hickory Smoked Bacon.
Is it fully cooked?
Yes. Slice it and eat it cold, or sear slices in a skillet over medium-high heat for a minute or two per side until browned and warm.
Does it come sliced?
No, it comes as one whole piece, so you can cut it the way you like. A sharp knife and quarter-inch slices are a good place to start for breakfast.
How should I store it?
It arrives frozen. Keep frozen until you need it, then thaw in the refrigerator for a day or two. Once opened, keep it wrapped and refrigerated and use within about a week. You can also cut it into smaller pieces and refreeze what you won't use right away.
What goes with it?
Eggs, biscuits, and a skillet of potatoes. For a bigger breakfast spread, add our Country Ham Breakfast Set or a boneless half ham for the holidays.
